Easy Cookie Ice Cream Sandwich Hack

Make ice cream sandwiches with less mess using this clever hack and Reynolds KITCHENS® Parchment Paper with SmartGrid®.

BAKE YOUR COOKIES

Use this yummy Cinnamon Coffee Cookie recipe or Double Chocolate Peppermint Cookie recipe to take your ice cream sandwich to the next level. Keep in mind that you need to make slightly bigger cookies than what the base recipe calls for to accommodate your ice cream.

  • Aim to make your cookies around 4 inches wide.
  • The gridlines on Reynolds KITCHENS® Parchment Paper with SmartGrid® are 1-inch apart, so you can use this to measure.

FOR CINNAMON COFFEE ICE CREAM COOKIE SANDWICHES

Grab a pint of your favorite ice cream and using a large knife, cut directly through the pint of ice cream to make clean slices. Place the ice cream slice between two cookies and voila! Vanilla is delish, but anything goes.

FOR DOUBLE CHOCOLATE PEPPERMINT ICE CREAM COOKIE SANDWICHES

To decorate, after adding the ice cream in the same way that you would for the cinnamon cookies, roll the edges in coarsely crushed candies. Place in a single layer in an air tight container lined with parchment paper. Freeze immediately until ice cream is firm.

  • Freeze on a baking sheet until firm, at least 2 hours, then wrap airtight using Reynolds KITCHENS® Quick Cut Plastic Wrap. Freeze wrapped sandwiches for up to 3 days. Let stand at room temperature for 15 minutes before serving.
