Apricot-Honey Mustard Sausage Bites

The slow cooker steps in when it's party time. Combine this lower-fat version of sausage cooked in sweet fruit preserves for a twist on celebration food. Honey mustard offsets the sweet with some tang. They all mingle in the slow cooker as the sausage pieces simmer. This recipe calls out for the use of a slow cooker liner because it would otherwise require soaking and scrubbing to clean. Serve in the slow cooker or transfer to a bowl. And with slow cooker liners, cleanup is a snap! Just remember to let the slow cooker cool and remove all of the food before gathering the slow cooker liner and throwing it away. And don't forget to include colorful party picks on the side!

  • 2 12-ounce packages apple-flavor cooked chicken sausage links (8 links)
  • 2/3 cup apricot preserves or sugar-free apricot preserves
  • 8 dried apricots, quartered (about 1/2 cup)
  • 1/3 cup chopped onion (1 small)
  • 3 tablespoons honey mustard
  • 1 tablespoon water
  • 1/2 teaspoon snipped fresh thyme
  • Disposable slow cooker liner


Step 1

Bias-cut each sausage link into eight slices (64 slices total).

Step 2

Place the disposable slow cooker liner inside a 2-quart slow cooker bowl. Fit liner snugly against the bottom and sides; pull top of liner over rim of bowl. Combine apricot preserves, dried apricots, onion, honey mustard, and the water; add sausage, stirring to coat. Add sausage mixture to slow cooker. Cover; cook on low-heat setting for 3 to 4 hours or on high-heat setting for 1 1/2 to 2 hours. Just before serving, stir in thyme.
