How to make breakfast burritos step-by-step 

Making meal prep breakfast burritos is easier than you think—and it begins with just a few simple ingredients. Follow this step-by-step guide to create breakfast burritos you can freeze and enjoy all week long. They’re perfect for saving time while still getting a warm, hearty start to your day, a quick lunch or dinner, or a late-night snack. 

Step 1: Gather and prep your burrito ingredients 

Makes about 8 to 10 freezeable breakfast burritos, depending on the amount of ingredients you plan to include. 

Commonly used breakfast burrito ingredients 

  • Tortillas: 8 to 10 12-inch flour tortillas (burrito-sized)
  • One dozen scrambled eggs: Often cooked with milk or cream for fluffier, richer eggs
  • One half pound to a pound of protein: Bacon, breakfast sausage, chorizo, or other meats.
  • Other proteins: Nuts, a small can of well-drained beans, or plant-based protein options
  • Eight ounces of cheese: Shredded cheddar, Monterey Jack, or a Mexican blend. Pro tip: Buy a block of your favorite cheese and shred it yourself for extra-soft, melty cheese at a lower cost than purchasing pre-shredded cheese.
  • Four cups of frozen (or fresh potatoes): Home fries, hashbrowns, or roasted potatoes are popular additions for hearty flavor and filling
  • Veggies to taste: Diced onions, bell peppers, mushrooms, and jalapenos are flavorful options for burrito add-ins
  • Season to taste: Add salt, pepper, garlic, or your favorite seasoned blend1, 2, 3 

Burrito toppings to add after reheating 

Add these high-moisture toppings after reheating for freshness, as they may cause the burritos to become brown or soggy during reheating. 

  • Avocado or guacamole
  • Cilantro
  • Diced tomatoes
  • Salsa
  • Hot sauce
  • Sour cream
  • Ranch dressing
  • Ketchup 

Step 2: Cook your burrito ingredients 

Please select your favorite burrito ingredients and prepare them for wrapping. Some proteins, such as eggs, sausage, bacon, sautéed vegetables, and potatoes, require precooking. Even your tortilla shells need to be warmed before wrapping for best results. Here’s a list of a few items you’ll want to precook before adding them to your burrito: 

Precook your proteins 

Eggs 

  1. Preheat a medium-sized skillet, preferably non-stick
  2. Crack eggs in a separate bowl and whip one dozen eggs with a fork or whisk
  3. Add one tablespoon of milk or cream per egg for added moisture and fluffiness (optional)
  4. Add one teaspoon of butter per egg (for a dozen, use ½ cup of butter) to the skillet and allow it to melt
  5. Pour eggs slowly into the hot skillet, folding the eggs gently with a spatula as they cook
  6. Cook for 2-3 minutes over low to medium-low heat or until eggs are glossy, soft, wet, and slightly overdone.
  7. Remove the skillet from the heat. The eggs will continue to cook in the skillet after it is removed.4 

Sausage 

  1. In the same warm skillet as your eggs (or a new skillet), add your ground sausage
  2. Cook your ground sausage on medium-high heat for about seven to eight minutes, breaking up into smaller chunks using a spatula
  3. Once the sausage is thoroughly done (reaching an internal temperature of 160°F, as measured with a meat thermometer), remove sausage crumbles from the skillet and set them aside on a paper towel-lined dish to absorb extra grease 

Cooking bacon in the oven 

This optional bacon cooking method can help you save time by cooking bacon in batches for breakfast burritos. However, if you prefer, you can also cook it in a skillet on the stovetop. 

  1. Preheat your oven to 400°F
  2. Line a rimmed baking sheet with Reynolds Kitchens® Non-Stick Aluminum Foil
  3. Arrange your bacon on the foil-lined baking sheet
  4. Bake for 15 to 20 minutes, or until desired crispiness
  5. Carefully remove, avoiding spilling any grease
  6. Remove the bacon to a paper towel-lined dish to absorb extra grease and set aside
  7. Crumble your bacon once cooled 

Sautee your vegetables and potatoes 

For veggies 

  1. Use a skillet with a small amount of the sausage or bacon grease (or about one tablespoon of oil)
  2. Add diced veggies to the skillet
  3. Sautee for 5 to 7 minutes until softened
  4. Remove from the skillet and set aside on a paper towel-lined dish to absorb the water and grease from the cooked veggies 

For potatoes or hashbrowns 

  • Follow the package instructions for store-bought frozen hashbrowns
  • Follow your favorite recipe for making homemade hashbrowns, home fries, or roasted potatoes 

Heat your burrito flour wrap 

  • In a lightly greased, buttered, or sprayed skillet, gently heat your flour tortilla until warm and flexible. Do not brown or overcook
  • Alternatively, wrap a stack of flour tortilla wraps with a damp paper towel and microwave for about 20 seconds until warm and flexible 

Step 3: Assemble, layer, and wrap 

Before assembling, ensure that all cooked ingredients have cooled. Add ingredients in a line down the center of the tortilla, ensuring there is enough room to fold in all sides to seal the ingredients when wrapping. Be careful not to overstuff. Layer the ingredients in the order listed below for best results. Skip the steps for ingredients you aren’t including: 

  1. Lay each soft tortilla on a large sheet of heavy-duty foil. The foil should be large enough to wrap the breakfast burrito completely
  2. First, add a layer of shredded cheese, about one tablespoon or more. The cheese creates a moisture barrier between the tortilla and the eggs
  3. Then, add a few tablespoons of scrambled eggs
  4. Add a few tablespoons of your home fries, roasted potatoes, or hashbrowns
  5. Next, add a few tablespoons of ground sausage or other protein
  6. Optionally, add a tablespoon of your sautéed veggies
  7. Add 1 to 2 pieces of bacon, or 1 to 2 tablespoons of crumbled bacon
  8. Add salt, pepper, and any other desired seasonings to taste. Avoid adding too much sauce or condiments, as this can cause burritos to become soggy or fall apart when reheating3, 5 

How to wrap a breakfast burrito 

  1. Arrange the fillings in a line down the center
  2. At each end of the filling line, fold the sides of the tortilla inwards about one inch
  3. Carefully roll the bottom of the burrito, taking one side over the layered ingredients, creating a pouch
  4. Carefully tuck in the filling and fold in the corners as you continue to slowly roll the pouch forward until your burrito is seam side down
  5. If your tortilla tears, you may need to remove some filling and try again, or use a new one
  6. If tearing keeps happening, you likely have too many ingredients stuffed in your tortilla, or your tortillas might be stale, overcooked, or not warm and flexible enough6 

Step 4: Gently sear your wrapped breakfast burritos 

  1. Once your burrito is wrapped tightly, place it in a medium-hot skillet so that the seam of the tortilla is directly against the heat to seal.
  2. Once sealed, flip the burrito every 1 to 2 minutes, browning each side slowly to melt the cheese inside.
  3. Remove and repeat with the remaining burritos

Step 5: How to Freeze Breakfast Burritos

Directions: 

  1. Lay your sheet of aluminum foil out in front of you like a diamond, and ensure your breakfast burrito is in the center of the foil sheet
  2. Fold the sides of the aluminum foil sheet to the burrito
  3. Roll tightly
  4. Repeat for the remaining burritos
  5. For convenience, place wrapped burritos in a freezer bag or an airtight container, labeling them with the type of breakfast burritos you’ve made and the date. Remove as much air as possible before sealing
  6. Place in the freezer. Burritos can be stored in the freezer for up to 3 months as recommended by the USDA

Step 6: How to reheat frozen breakfast burritos 

For all reheating methods, always check for doneness to ensure food is cooked thoroughly. The center of the breakfast burrito must reach an internal temperature of 165°F, as measured with a meat thermometer. 

Microwave breakfast burrito reheating 

By far, the microwave is the quickest and easiest way to go from freezer to ready-to-eat. Simply pop it in the microwave for a few minutes, and you're good to go for the rest of your day. 

  1. Remove the burrito from the foil and wrap in a damp towel
  2. Microwave for 2 to 4 minutes, or until the internal temperature reads 165°F on a meat thermometer
  3. Discard the paper towel, add additional toppings, and enjoy7, 8 

Broiler and microwave reheating 

Do you love a crispier tortilla? After microwaving, broil your burrito for a satisfying crunch with extra cheese. 

  1. Remove the burrito from the foil and wrap in a damp towel
  2. Microwave for 2 to 4 minutes, then check for doneness using a meat thermometer to ensure it's cooked through. The burrito’s internal temperature must reach 165°F
  3. Remove the paper towel
  4. Place the burrito on a foil-lined baking sheet with a 1-inch rim
  5. Sprinkle a tablespoon of cheese on top of the burrito on a foil-lined baking sheet
  6. Broil until cheese is melted and starting to brown, about three to five minutes7, 8 

Skillet and microwave reheating 

Here’s another quick method to achieve that tasty, golden-browned, tortilla on the outside of your burrito. 

  1. Remove the burrito from the foil, and wrap in a damp towel
  2. Microwave for two to four minutes until heated thoroughly to an internal temperature of 165°F
  3. Remove the paper towel
  4. Heat ½ teaspoon oil (per burrito) in a medium-sized skillet over medium-high heat until shimmering
  5. Cook the burrito until golden brown and crispy, about 1 to 2 minutes per side
  6. Add toppings if you desire7, 8 

Reheating a burrito in an air fryer 

If you prefer a hands-off reheating method, skip the microwaving step and reheat your burrito in an air fryer for no-fuss, tasty, and crispy results. Your breakfast burrito will warm up while you’re getting ready, so it’ll be all set to enjoy as soon as you're finished! 

  1. Preheat air fryer to 400°F
  2. Remove the foil wrap before heating
