Slow-Cooker Chinese Chicken & Rice

  • 1½ pounds skinless, boneless chicken thighs, cut into 1-inch pieces
  • 1 cup uncooked regular brown rice
  • 3 tablespoons minced fresh ginger
  • ⅛ teaspoon ground black pepper
  • 6 cups reduced-sodium chicken broth
  • ¼ cup slivered green onions
  • 2 tablespoons chopped peanuts
  • Bottled hot pepper sauce, torn fresh basil leaves, and/or reduced-sodium soy sauce (optional)
  • Reynolds KITCHENS® Slow Cooker Liners (Regular Size)


Step 1

Coat a large skillet with cooking spray; heat skillet over medium-high heat. Cook chicken, half at a time, in hot skillet until browned.

Step 2

Line a 4-quart slow cooker with a Reynolds KITCHENS® Slow Cooker Liner, combine cooked chicken, rice, ginger and black pepper. Pour broth over mixture in cooker. Cover and cook on Low for about 8 hours, or until mixture reaches a porridge-like consistency.

Step 3

To serve, spoon into 4 bowls. Top with green onions and peanuts. If desired, serve with hot pepper sauce, basil and/or soy sauce.
