Ingredients
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup applesauce
- 1 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 3/4 tsp ground nutmeg
- 1 Tbs honey
- 1 cup instant oatmeal, or rolled oats (approx. 3 packets of instant)
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup sunflower seeds
- 1 cup toasted o’s oat cereal
Directions
Step 1
Preheat oven to 375°
Step 2
In a large mixing bowl, cream together the butter, peanut butter and sugar until light and fluffy. Beat in the egg, applesauce, vanilla, nutmeg, and honey
Step 3
In a separate bowl, combine remaining ingredients and gradually stir in the creamed mixture
Step 4
Drop batter by rounded spoonfuls, onto a cookie sheet lined with parchment paper. Space at least 2 inches apart
Step 5
Bake for 8-10 minutes
Step 6
Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool, cookies will be soft
