The absorbent layer nested between the 2 outer metal layers is a key to helping you cook bacon that’s less greasy. In our initial kitchen tests, it took 3-4 batches of bacon (13-18 strips) to saturate the absorbent layer and for grease to collect in the pan similar to other pans that don’t have the absorbent layer included.

We have included recommended directions for cooking fish in our pans in printed format on the back of each label: "Follow directions on the fish package for oven cooking times and temperatures… To cook at 400 degrees F: Place rack in center of oven. Cook 10 to 12 minutes per inch of thickness..."

We have included recommended directions for cooking bacon in our pans in printed format on the back of each label: "Place rack in highest position in oven and heat oven to 400°F or according to package directions. Place 4 to 6 strips of bacon in single layer in pan. Bake 12 to 14 minutes until done. Bake longer for crispier bacon. No need to turn bacon."
